I have set the defult currency to my local currency also when a seller chose a currency another than US $ , the dollar sign $ keep showing up in every page instead of the currency selected.

The default currency is what will the user selected by default as his item currency, the FEEs currency is what you set in your language manager->General file->currency variable.
